As a business entrepreneur, James “Jimmy” Vigilante is the founder and principal owner of JVC Food Safety Specialists, a Las Vegas based environmental health and hospitality development consultation company, whose portfolio includes many prestigious food and beverage properties along the Las Vegas Strip and throughout the United States. Jimmy Vigilante helped pioneer the high awaited opening of the Bellagio Resort and Hotel in 1998. His creative vision included incorporating specialized food & beverage safety training within all levels of culinary and managerial staff, aiming to set a new standard in the Las Vegas strip high-end hospitality market. In 2005, Jimmy received a promotion of Corporate Director of Environmental Health and Safety for MGM MIRAGE which allowed his expertise to further evolve in the oversight of environmental health for each property within the corporation. In 1992, Jimmy obtained employment with the State of Florida Business and Professional Regulation/Division of Hotel and Restaurants as a Sanitation Safety Specialist/Health Inspector. Jimmy’s position consisted of a complete general oversight of the State of Florida Plan Review Department. Jimmy earned his credentials as a State of Nevada and National Registered Environmental Health Specialist / Registered Sanitarian (REHS / RS) while maintaining his status as a Registered Sanitarian and Onsite Sewage Treatment and Disposal Specialist, FDA Standardization, Special Fire Safety Inspector & Architectural Evaluation, Microbial Food Safety, Agroterrorisim / Food Safety and Disaster Preparedness Certifications.
